What is Taiwanese shaved ice?
Ice Cave is a family-run Taiwanese shaved ice and bubble tea shop at 3 N. Euclid Ave in the Central West End of St. Louis, not far from Washington University and Saint Louis University. We make everything in house and shave every bowl to order.
In Taiwan it is called xue hua bing (雪花冰), which means "shaved snow ice." Instead of pouring syrup over crushed ice, we freeze real milk or fruit into a block and shave it into paper-thin ribbons. The result is light and fluffy, and it melts on your tongue. We finish each bowl with toppings like fresh mango or strawberry, taro, red bean, custard pudding, boba and a drizzle of condensed milk.
Made from scratch
Our ice blocks and syrups are made in our own kitchen with real fruit. Each batch of our mango base takes 48 hours to make from whole fruit. Our shaved ice has no preservatives and no trans fat.
Something for everyone
Choose a milk-based flavor like matcha, taro or classic vanilla, or a dairy-free, vegan flavor like mango pineapple or pineapple coconut. Every item on our menu is labeled for allergens and for vegan, vegetarian and gluten-free diets.
More than shaved ice
We also serve bubble tea, fruit tea, tea lattes, slushes and smoothies, along with Taiwanese wheel cakes and handmade ice pops. For parties, campus events and offices, we cater shaved ice, bubble tea and ice pops.
What is Taiwanese shaved ice?
Taiwanese shaved ice, called xue hua bing or "snow ice," is a frozen dessert made by freezing milk or fruit into a block and shaving it into thin, fluffy ribbons. It is served with toppings such as fresh fruit, taro, red bean, custard pudding, boba and condensed milk.
How is it different from a snow cone or Hawaiian shave ice?
A snow cone is plain ice with syrup poured on top. With Taiwanese shaved ice, the flavor is frozen into the ice block itself, so every ribbon tastes like mango, matcha or milk. The texture is soft and creamy, closer to fresh snow than to crushed ice.

What are Ice Cave's hours?
Ice Cave is open Monday to Saturday from 11 am to 9 pm and Sunday from 1 pm to 8 pm.
Do you have dairy-free or vegan shaved ice?
Yes. Our fruit-based flavors, including Mango & Pineapple, Pineapple Coconut and Mango Coconut, are dairy-free and vegan. Milk-based flavors such as matcha, taro and vanilla contain dairy. Every menu item is labeled.
Is your shaved ice gluten-free?
Most of our shaved ice flavors are labeled gluten-free on the menu. Some toppings, such as Biscoff cookies, contain gluten, and our kitchen also makes wheel cakes, which contain wheat. Please tell us about any allergy when you order.
What shaved ice flavors do you have?
Our flavors include matcha green tea, classic vanilla, chocolate,, and taro, plus seasonal flavors like mango pineapple, pineapple coconut, mango coconut, apple cider and pumpkin cheesecake. Signature bowls include Mango Paradise, Mango Pomelo and Formosa.
Do you serve bubble tea, and can I order online?
Yes. We serve milk tea, fruit tea, tea lattes, slushes and smoothies. You can order drinks online for pickup at icecavebctz.square.site.
Do you offer catering?
